In Hinduism, what is the procedure to convert?

I'm a canadian citizen who is originally East European. I was born in Eastern Europe, but raised in Canada. After living in India I realized that my family is low caste. I want to be Hindu, but I believe I am not born a Hindu. I've heard that converting to Hinduism is not allowed and everyone must be born a Hindu. How do people from other countries become Hindu?
