What is the "Anime" style?

Ok so I'm a college student in the research stage of a short story based on a character that's going to be the next reboot of Captain America (if you're wondering why here is my reasoning, Captain America is a character who doesn't age, he was frozen in ice and woke up alive, and during that time the Cold War was going on and our next Captain America is going to be born from this, so he's not going to know the world, no one will know him, and he's going to have to navigate the modern world).

The research stage is really intense and I do not feel qualified to write this story because I'm not really a marvel fan, but I love the character of Captain America and I'm excited about it. The lead director is a big fan of anime, as you can imagine, but I've been given the task to take Captain America and turn him into a marvel character that is reminiscent of anime, which is a tall task to say the least.

I am not an anime person, I know what anime is and I know that it's popular, but it's not really my area of expertise. I know that there are various types of anime, so my question is what is "the anime style"? Is it reminiscent of Attack on Titan, is it more Dragon Ball Z? Is it perhaps the shared universe of One Piece where the story is quite epic, but short? What are the key characteristics of anime that we can use to make Captain America more "anime-like" without losing the basic essence of who he is?

Also what anime do people recommend I watch?
