What do sophisticated Christians make of the "Single Eye" passage in Matthew and Luke?

The passage is the following:

“26 If your right eye causes you to stumble, gouge it out and throw it away. It is better for you to lose one part of your body than for your whole body to be thrown into hell. 27 And if your right hand causes you to stumble, cut it off and throw it away. It is better for you to lose one part of your body than for your whole body to go into hell.

28 “But what comes out of the mouth gets its start in the heart. 29 It’s from the heart that we vomit up evil thoughts, murders, adulteries, fornications, thefts, lies, and blasphemies. 30 That’s what contaminates. Eating without washing your hands doesn’t." - Matthew 5:26-30, Luke 6:45

I can't imagine many Christians out there believe we should actually remove our eyes or hands every time we sin with them. The imagery doesn't seem to be meaningfully interpretable in a different way. But I'm interested in how sophisticated Christians try to think about these passages, and what they think they mean.
