To calculate how much money goes missing in your workplace, you need to know total yearly sales and mark up of your store/retailer. I'm willing to bet 5% of sales minimum goes missing in every retail store across the board.

For example, I work in retail that does 15 million a year and our markup is 40% (so we make 6 million a year). If 5% of sales goes missing, that's $750,000 missing every year in my store alone.

Edit: I work in a supermarket. I do believe that some businesses have much higher loss than 5%. I've worked in retail for 10 years and 5% is a conservative estimate in my opinion.
