If you’re getting an interview at a high end restaurant, 90% of the time they’re not trying to find out if you can do the job they’re trying to see how well you can sell yourself.

My advice is to just be confident and calm about your abilities. Don’t talk yourself up, don’t talk yourself down. They see tons of people each week and you meeting their confidence expectations gets you a call back 90% of the time. I’ve been to interviews in which I was confident that I got the job and did, but I also chose to turn the job down and not take it. I’ve also been to interviews where I was nearly shaking and felt like I failed everything and got the call back. I did this for a few years and at the end of it all, the only real advice you can give to young people is to be confident in your work and abilities. 90% of the time they’re not trying to make sure you can do the job. They just want to see the person selling the product and if you can put yourself in that narrative, you’re halfway home. I’m not sure if this applies to anything other than cooking, but I’m sure it does. Happy eating.
