A good way to ensure you are getting enough fiber / nutrients every night is to have a rotation of frozen legumes in the freezer. Throw a handful or two of each into a pot with some tomato soup / sauce and garlic. Add an egg and cook until it's done and you have a very filling and nutritious meal. <br><br><br>As you run out of each, replace them and try new ones. I started with the basics (peas, carrots, corn) and then the legumes (beans, broccoli, cauliflower) and the mushrooms / onions. <br><br>There is a lot of nutritional diversity in frozen vegetables. <br><br>I am not an adult, but I play one at work.
