How would you teach the same class to a bunch of middle school students and a higher ed class?

Our US history survey is split into 1 class for new students and 1 for more experienced students. The material is exactly the same. It is supposed to be designed to adapt to the different skill levels/needs of those students. I thought I’d ask all of you, how would you approach the same course for middle schoolers vs adults?

I make the assumption that middle schoolers need more social skills training and need the subject broken down into bite sized chunks whereas I think the college-aged kids need to dig a bit deeper.

For example, I teach maps. A map is like a puzzle piece - you look at it and get a visual of where something fits. You match the edges so that you can see the whole picture. For middle schoolers, I use a puzzle piece model, but for college kids, I’m showing them how certain maps have influenced historical events (for example, the Peters map and its impact on Cold War propaganda).

I’m curious as to how you all approach the same subject for kids who are at two very different places in terms of cognitive, social, and emotional development.
