I'm a personal chef for a upper class family in the US with a multi-million dollar house who go on many vacations every year. They claim they miss authentic European and Asian food after living abroad for several years. <br><br>I used to work in a high end restaraunt in New York but I couldn't take the hours so I started my own business as a personal chef and one of my clients was this family. <br><br>The first few dishes I made for them were pretty authentic, but I was working 14 hour days to find ingredients, reduce waste, prepare everything, and clean up afterwards. I was absolutely exhausted and I actually burned myself pretty badly trying to make their favorite pasta dish from scratch. <br><br>I took a shortcut the next time by using some instant sauce mix and they literally didn't notice. Since then I just use whatever is available and makes things easier and they think that I'm preparing everything from scratch. Literally no one noticed. They even ask me "where did you manage to find quilted goat cheese in this city?" And I'm like, I just made it up. I use wine vinegar instead of actual wine, instant broth instead of stock, and I don't even peel the membranes off the sausages for certain dishes, which I always used to do. If a recipe calls for a special ingredient I just add some random spice and they think it's authentic Italian basil or whatever. <br><br>They've literally never noticed. Or if they did they haven't said anything. I've been doing this for over a year. Sometimes I feel bad like I'm taking advantage but screw it, they're wealthy. If they were actually missing the food from abroad they'd notice. If they paid me more I'd do it properly but yeah, no. I'm just glad my clients are happy, me and my burn scar are happier.
