Questions about latino cultures for a fantasy story

I'm trying to write a story set in a (high) medieval fantasy world inspired heavily in iberian medieval kingdoms (such as León, Castile, Portugal, Navarre). I'm doing my best to take what I can about the cultures and societies that were in Iberia during that time (the christians, moors, visigoths, etc) but I'm worried I'm gonna end up being a cultural appropriationist, by accident mostly.

I'm latino of south american descent and I'm doing my best to be as respectful to my own heritage as I can but I'm still not from Spain or Portugal and I want to make sure that I'm being respectful enough to the cultures I'm taking inspiration from. I'd rather delay the story than write something offensive.

Anyways, I'm posting here because I have a few questions that I'd like to get answered. There are some things I'm not 100% sure about or would like a second opinion on, and so I'm gonna ask here. I'll be stopping by the chat periodically to answer any questions you may have in regards to my story (naive questions are more than welcome).

So now, on to the questions:

1. How would the class system work in a feudal society such as this? For example I know that there was a heavy burden on the peasantry and such, but what about the middle class? Was there one? How would such a system work?

2. How do you think magic would be seen in such a society? In my story magic isn't super common and it's heavily tied to religion, so I guess it wouldn't be viewed as weird or unexplainable, you know? But how influential can it be? Would it be viewed as divine miracles, even if it's not necessarily so? Or would it be viewed as witchery?

3. I know that kings in medieval times weren't viewed as the most important people in the hierarchy of their societies. Who would be above them? The head of church? Would the church hold more power than the crown?

4. How do you think a Holy war would work in a fantasy setting such as this? I know there was a… well, a Crusade, but I'm not too well versed in it and I'd love to know more about it.

5. How was education seen in those times? What were schools like? Would they be within sight of the general population or more… private?

6. What would be the general view of the common folk towards magic users? Would it be viewed as ungodly? As demonic? Or as… divine I guess? Magic users wouldn't be too common, but would they be seen as tools of the gods?

7. This one may be a bit more anecdotal but… how would you guys see jousting working in a fantasy setting? I'm doing my best to make it make sense, but I'm not seeing it too clearly. How would the rules work? Would there be an official head of the tournament who decrees the rules?

8. How would you think war crimes should be punished? I know wars of religion were brutal, especially if there was a component of magic in there. Would war crimes be punishable by law? Would they be… common?

9. What would be the general view on the common folk towards the existence of other kingdoms? Would they… know about them? Knowing the geography of the land, it seems unlikely that they wouldn't, but how would news travel?

10. What do you think would happen to the spoils of war? Would they be split between the kingdom and the soldiers? But how? Would there be a general distribution?

11. How would you think the church would react to the existence of magic? Would they consider it a divine gift? A demonic curse? Something in between?

12. Are there any books or resources you'd recommend? Up until now I've been going by instinct mostly, but I'd love to hear some recommendations you guys have!

Well, that's it for now. I think these questions will give me a good starting point, but if I have any more you guys will be the first I'll come to. Also, if any of you would like to know more about my story, please feel free to ask. I'd be more than happy to elaborate!

Thanks in advance for your answers

Have a great day

P.D - I'm a little dumb so I'm not 100% sure what a "tag" is or what they're for. If I did something wrong with the tags please let me know!

Edit - hey I can't answer everybody individually (even though I would love to) so I'm gonna do a general answer to summarize my story and answer the questions you guys have asked.

My story is set in a kingdom similar to León, Navarre, Castile or Portugal, just with some fantasy elements. I'm including fantastical creatures, magic and similar elements, but I'm trying to keep it as historically accurate as possible because I feel like that's part of the fun.

In regards to the culture, I'm drawing heavily from what I know about South American culture and the traditions we have kept from Spain and Portugal (most of SA has been heavily hispanized) and I'm trying to make it as respectful as I can. I'm trying to mix it with some elements from other cultures I'm more familiar with for a certain amount of diversity within the world itself, but I want to keep it close enough that it can still be considered the culture that it's inspired in, if that makes sense.

I know that I can be seen as a cultural appropriator because of my own heritage, but I'm trying to keep it as respectful as possible and I'm doing my best to just take… let's call them "inspirations" from the cultures I'm taking from.

As for the story itself it's just a general "young man joins an order of knights and finds love"… just with magic and… well, pretty much every fantasy element you can think of.
